El té verde está constituido por las hojas que tras la recolección son estabilizadas mediante vapor de agua a presión, evitando la oxidación enzimática. En el caso del té negro (Theae nigrae folium), las hojas se dejan fermentar en habitaciones ventiladas, proceso durante el cual las oxidasas pueden actuar. Bases xánticas (3-4%): mayoritariamente cafeína (= teína), teofilina, teobromina, adenina y xantina. Contiene catequinas: (-)-epigalocatequina-3-galato, (-)-epigalocatequina, (-)-epicatequina-3-galato, (-)-epicatequina. Estas catequinas son oxidadas y se polimerizan en el té negro. Además contiene teaflavinas (teaflavina, teaflavina-3-galato, teaflavina-3´-galato, teflavina-3,3´-digalato), 8-25 % de taninos catéquicos (libres y combinados a bases xánticas), flavonoides (kempferol, quercetina, miricetina), ácidos cafeilquínicos, antocianidinas y saponinas (assamsaponinas, tesaponinas).
